"Eat to Live" by Dr. Joel Fuhrman

The book "Eat to Live" by Dr. Joel Fuhrman is a great introduction to why a plant-based diet should be important in your life.  He invented the term "Nutritarian" for a brilliant marketing reason: (1) "vegan's" cannot and do not eat any animal products - that's a hard sell to the uninitiated.  "Nutritarian's" can eat anything they want as long as they make the most nutritious choices - nothing's completely off the table (even though eating animal products is STRONGLY discouraged).  So, what's the difference: a vegan doesn't eat animal products and may be vegan due to ethical concerns.  A nutritatian may eat animal products sparingly and eats plant-based for nutritious reasons.  The content of the book is great, though it's not quite the page turner that Dr. McDougal's book is, for example.  Highly recommended, but parts might be a struggle to get through - but get through them, it's worth it.
